It is a hugely popular recipe because it is both delicious and healthy as well as super easy to make. It is both high in protein and low in carbs. When served with Roasted Asparagus or my Healthy Green Salad, you can round out your mea.
It tastes so good and is so addicting that it has earned the nickname of Crack Slaw.

What Is In Crack Slaw or Eggroll In A Bowl?
This is a popular low carb recipe made with ground beef and cabbage, as well as other vegetables. It is definitely not your Mama's slaw recipe.

If your package of coleslaw mix includes a package for a sauce, do NOT use that in this recipe.
- Shredded Carrots. To add additional color and nutrition, I add 1/2 cup additional shredded carrots to the coleslaw. You could also add other vegetables as well, such as red or green bell peppers.
- Oil.use sesame oil, if you have it. Otherwise, you can use olive oil, avocado oil or your favorite oil to cook the onions, garlic, and ground beef. Sesame oil has a very unique flavor. However, unless you plan to use it in other recipes, I don't recommend going out to buy it just for the small amount used in this Eggroll In A Bowl (Crack Slaw) recipe.
- Onion. Chopped onion is added to the ground beef.
- Garlic. Two cloves of garlic are minced and added to the ground beef.
- Ginger.I recommend using fresh ginger. However, ground ginger could be substituted.
- Soy Sauce.Soy sauce gives this recipe a lot of flavor. You can use gluten-free soy sauce or Coconut Aminos, which is a healthy gluten-free alternative to soy sauce.
- Rice Vinegar.Often combined with soy sauce in Asian dishes, it is sweeter than most other vinegar. If you don't have it, try using apple cider vinegar or white vinegar as a substitute.
- Sriracha. Sriracha is a unique hot sauce often used in Asian dishes. If you don't have it, you can use another type of chili garlic sauce or any type of hot sauce you like.
- Green Onions. Chop a couple of green onions to add as a garnish on top of the Eggroll In A Bowl (Crack Slaw).
- Sesame Seeds. Sprinkle with a tablespoon of sesame seeds over the top of the dish before serving,

How To Make Eggroll In A Bowl (Crack Slaw)

Step 1. Heat oil in a large skillet over medium heat.
Step 2. Saute onions in oil for about 3 – 5 minutes and cook the garlic for about one minute.
Step 3. Add the ground beef to the onions, garlic, and ginger.
Step 4. Cook the ground beef until brown and no longer pink and juices run clear.
Step 5. Empty the bag of coleslaw mix (shredded cabbage) and shredded carrots to the ground beef.
Step 6.Cook the coleslaw (shredded cabbage and carrots) with the ground beef until the cabbage is wilted and carrots are softened. Pour in the soy sauce, vinegar, and sriracha and stir.

Step 7.Garnish the dish with chopped green onions, more sriracha, and sesame seeds. Serve hot!

Eggroll In A Bowl (Crack Slaw) is really a meal in itself and can be served just by itself without any other sides. However, if you want to pair it with other sides, here are some suggestions.

- 1 pound (16-ounces) ground beef
- 1 (16-ounce package) coleslaw mix
- 1/4 cup (2-ounces) shredded carrots
- 1 Tablespoon oil
- 1 onion , chopped
- 2 cloves garlic , minced
- 2 teaspoons minced fresh ginger
- 3 Tablespoons soy sauce (or Coconut Aminos)
- 1 Tablespoon rice vinegar (or apple cider vinegar)
- 2 teaspoons Sriracha (or to taste)
- 4 Tablespoons chopped green onions
- 1/2 teaspoon sesame seeds

Use different types of protein. Ground Beef, Sausage, Ground Pork, Ground Chicken, or Ground Turkey will all work. Pick your protein of choice. I used 85% lean ground beef. However, You could also combine beef and pork for a different twist.
Vegetable Shortcut.Yes. You can buy heads of different types of cabbage, but I recommend saving time and using a Coleslaw Mix of your choice. I like to use Broccoli slaw, made of shredded broccoli, to add some extra wholesome goodness to the dishl. It will also give it a little more crunchy texture. IMPORTANT: If your package of coleslaw mix includes a package for a sauce, do NOT use that in this recipe.
